it is up to the schools and sometimes their (football/baseball loving) athletic directors...
most all of central and north florida teams have been operating as full on varsity programs since their inception (treated as varsity by the school, but not the state for the past 15+ years).
In south and west florida, you find almost the opposite...a handful of FHSAA teams in southeast FL and then a ton of USL club teams in each....
In south and west florida there used to be true "club" teams IE: Coral Springs lacrosse club...made up of kids from multiple schools. That is becoming less common as those 'multiple schools' have now started club teams of their own.
at the individual school level, it used to be a big catch 22....."we won't sponsor a varsity team until the FHSAA sponsors it at the varsity level" and the FHSAA needed a certain ratio of schools(55 i think) to sponsor teams in order for them to sponsor it.
Now half of that equation has opened up (the FHSAA side) and it would not be shocking to see 40 "new" FHSAA teams as club teams make the jump....

The determination in FL about whether a HS is varsity or club has to do with how the school is incorporated. Private and some public schools operate outside of their counties jurisdiction. In Tampa and Orlando the county operates the schools so the when the county goes varsity then the schools go.

St. Andrews vs. Nease (St. Andrews won reg season matchup 10-3, Nease held St. Andrews to their lowest goal total against a FL team)
St. Andrews is the heavy favorite, they beat all the other teams left in the FHSAA playoffs convincingly.
Semi's are friday at 2PM Nease vs. St. A and 7PM WP vs. LB
All games at West Orange High School in winter garden, FL
State Final is saturday, not sure of the time...
