Although as a bartender I would have to disagree with some of the times, this new system seems to speed up service time. But seriously, if someone cant pour a proper beer with an inch or less of foam, they shouldn't be behind the bar. Also, a healthy head is a good way to show that a beer is good. As you get to the end of a keg, the beer tends to go flat and pour with no head.

I find that interesting that researchers, engineers, et al. are trying to find ways to help the bartenders have the ease and speed to get the drinks to the thirsty mass crowding into bars.

They have those things at the Metrodome. They are really nice for people that can't pour a beer. I used to be the only person in a concession stand that could work the beer taps at that place. You would seriously get mostly foam on every beer if you did not be extremely careful.

They basically have this. Its a device that will measure out all the alcohol beforehand. You just push a lever and the alcohol comes out and then you go the next liqour you need and push the lever. Its a lot easier. However as a bartender I'm glad I dont work at a bar that has these, its so much more fun to free pour and do tricks and stuff.

An easier way to do that is find a good bartender. Timing myself just kinda making a simple mixed drink with something thats on the rail i took no more than 7 seconds. And that was at a relaxed pace. Granted that during a rush it doesnt speed up that much, but I still like to think I can go pretty quick. Also, I would hate to have something that would pre-measure my alcohol. As an aspiring flair bartender, I would hate it if I couldnt free pour.
Oh, and on a side note, how do bartenders make a mojito or old fashioned?

Thats one way. Personally, I think my brother taught me the best way. Make them very poorly so they dont order it a second time. Thats the best way Ive found, especially if im busy.

Most Bar Owners want to install a centralized liquor distribution system to control costs from bartenders that over-pour. Liquor is VERY profitable in a busy bar. An maximizing the use of a bottle of liquor is key.

At a bar that my brother worked at for a while, they use pourers on the bottle that would pour almost exactly 1 oz. That way, you have to flip the bottle over again so you can pour another shot or less if you need. If you are looking to do flair bartending (think Tom Cruise in cocktail) only being able to pour a shot would be quite limiting. But for most places, these type of pourers would make sense.
