i dont' understand how chipotle plans on surviving as a mexican restaurant without offering queso.

Cheese costs more than most of their other products. McDonald's developed Chipotle for the soul purpose of providing high priced food that is cheap to produce. Cheese (with high diary prices these days) throws a wrinkle into that theory.

No worries, Danny... someday soon they will have cheese. Give it time.

One of my good buddies ran a pizza joint and he told me the same thing. Cheese is the most expensive ingredient. Always surprised me. On the "queso" note, I went to the Chipotle by my house and asked for a side of chips and queso with my order. The latin gentleman at the register said, "chips and cheese? Queso? You want cheese?" And I had to slink out of the restaraunt with my tail between my legs.

Dont worry Alex....I tried to order in spanish once...and I speak spanish ok, growing up in new mexico and all, and the people behind the counter actually laughed me out of the resturant.....straight to Applejacks across the parking lot..so that worked out ok
