I'm not the assigner for the league, so take this FWIW, but I doubt there would be problems getting officials. There's a pool of at least 20 guys who can do games of this level, so getting 4 there on any given night at once is no big deal.
You could probably even go to three-man crews if you wanted, but I have the feeling that the average summer league player would say something to the effect of, "The two, they see enough!"
Plus that's an added expense. Might be fun to do 3-man for the championship.
