When will the academic all american team be announced?

All-America!

One is an American from America. You are selected from the whole of the country, thus All-America, not American.

So the team is the All-America team, but are the players on said team not All-Americans?

No, you are an All-America selection/player. In the same way you are not a Hall of Famer, rather you are a Hall of Fame member or member of a particular Hall of Fame.

When one punches in "all-america", one gets "all-american" in the Merriam Webster online dictionary. This is the definition. Note that "all-america" is an alternative to "all-american". Note definition 1b. A team of all-Americans is an all-American team.
